Ingredients
- Poultry 8 pieces
- Maple syrup 5 tablespoons
- Olive Oil 2 tablespoons
- Dijon Mustard 1 tablespoon
- Garlic 2 cloves
- Rosemary 2 sprigs
- Meyer Lemon Juice 1 tablespoon
- New Potatoes 20 oz
- Marinated cherries 10 oz
Step-by-Step Guide
Step 1
Boil the small young potatoes in advance, crush the garlic with the flat side of a knife.
Step 2
Preheat the oven to 190°C.
Step 3
Place the pieces of chicken in a large bowl.
Step 4
Mix the maple syrup, oil, mustard, garlic, rosemary, lemon juice, and season to taste.
Step 5
Pour the marinade over the chicken and mix well.
Step 6
Arrange the pieces of chicken and potatoes on a large baking sheet with high sides or in a baking dish. Drizzle with the remaining marinade.
Step 7
Bake for 30-35 minutes, adding the tomatoes for the last 20 minutes.
Step 8
Serve with crusty bread.
