Chicken and Rice with Black Beans
Ingredients
- Chicken fillet 25 oz
- Vegetable Oil 2 tablespoons
- Mild Chili Spice 2 tablespoons
- Rice 1 cup
- Spanish onions 1 head
- Garlic 5 cloves
- Chicken Broth 1½ cups
- Canned Pork with Beans 5 oz
- Chopped Green Onions ¼ cup
- Cilantro 1 stem
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the oil in a large skillet over medium heat. Season the chicken breasts with salt and sprinkle with 1 tablespoon of chili powder. Sauté them in the hot oil until golden brown, about 3 minutes on each side, and transfer to a plate. In the remaining oil in the skillet, add the rice and onion, and stir-fry for 4–5 minutes until the rice becomes translucent. Add the garlic and the remaining chili powder, and stir. Add the broth and season with salt. Bring to a boil, reduce the heat, cover, and simmer for 10 minutes.
Step 2
Cut the chicken breasts into cubes and add them to the rice. Also add the black beans. Cover and cook for another 12 minutes. Remove from heat, sprinkle with chopped green onion, and let sit covered for another 5–10 minutes. Garnish with cilantro.
