- Shallots 12 heads
- Butter 0 oz
- Walnuts 5 oz
- Stilton Cheese 5 oz
- Thyme 2 sprigs
- Swiss Chard 20 oz
- Puff Pastry 20 oz
- Chicken Egg 1 piece
Step-by-Step Guide
Step 1
Sauté the shallots over low heat in half of the butter until soft and browned—this should take about 15 minutes.
Step 2
Transfer to a bowl and add the walnuts, cheese, and thyme.
Step 3
Blanch the Swiss chard in boiling water for 1 minute, drain, transfer to a skillet, and add the remaining butter, seasoning well with salt.
Step 4
Sauté for 1 minute to evaporate excess moisture, then add the remaining ingredients and cool.
Step 5
Preheat the oven to 200°C. Roll out the puff pastry to a thickness of 3 mm in a square shape with sides about 35 cm, then cut in half.
Step 6
Place the filling in a mound on one half of the pastry. Brush the edges with beaten egg, cover with the other half of the pastry, and pinch the edges together.
Step 7
Make slits in the pastry and brush with egg. Bake for 40 minutes until golden brown.
