Ingredients
- Egg white 3 pieces
- Milk 5 fl oz
- Butter 0 oz
- Cheshire Cheese 5 oz
- Wheat Flour 0 oz
- Cayenne Pepper a pinch
- English Dry Mustard ½ teaspoon
- Nutmeg to taste
- Lemon ½ piece
- Salt to taste
- Ground Black Pepper to taste
- Grated Pecorino Pepato Cheese 5 oz
Step-by-Step Guide
Step 1
In a small saucepan over medium heat, combine milk, butter, and flour until smooth, cooking for 3 minutes.
Step 2
Remove the saucepan from heat and stir in cayenne pepper, mustard, nutmeg, salt, and freshly ground black pepper. Allow the sauce to cool slightly and mix in the grated cheddar cheese. Add the beaten egg yolks and mix well.
Step 3
In a bowl rubbed with a lemon slice, whisk the egg whites (using the lemon slice) until stiff peaks form. Fold the resulting mixture into the sauce. Pour the mixture into a baking dish and bake on the middle rack of the oven for 35 minutes.
Step 4
Serve immediately, adding Parmesan cheese.
