  • Spinach 5 lbs
  • Chicken Egg 2 pieces
  • Wheat Flour 2 tablespoons
  • Butter to taste
  • Grated Pecorino Pepato Cheese 3 tablespoons
  • Nutmeg to taste

Step 1

Wash and finely chop the spinach.

Step 2

Mix it with the eggs, flour, cheese, and nutmeg, and let it sit for about 30 minutes. If the mixture is too runny, you can add more flour.

Step 3

Form the resulting mixture into gnocchi the size of a nut and boil them in salted water.

Step 4

Serve the gnocchi with melted butter, sage, and grated cheese. It is also delicious with a nut sauce.
