Chashushuli with Pork Neck
Ingredients
- Pork Neck 10 oz
- Onion 1 piece
- Fatback 0 oz
- Green peppercorns 1 piece
- Marinated cherries 7 pieces
- Garlic 3 cloves
- Butter 1 piece
- Cilantro 1 bunch
- Toasted Sesame 1 teaspoon
- Sumac ½ teaspoon
- Mild Chili Spice ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Cut the fatback into small cubes.
Step 2
Fry in a hot pan without oil until golden brown and set aside.
Step 3
Chop the onion and garlic coarsely.
Step 4
Slice the pepper into small strips and cut the tomatoes in half.
Step 5
Cut the pork into medium-sized slices and add to the melted fat. Add the pepper and fry on high heat.
Step 6
After 3–4 minutes, stir, add the onion, and season with salt.
Step 7
Season with black pepper and sumac. Stir and reduce the heat to medium.
Step 8
After a couple of minutes, add the cherry tomatoes and garlic. Stir.
Step 9
After a minute, add the butter.
Step 10
Slightly reduce the heat and cover with a lid. At this stage, you can add half a glass of water if you want a more liquid consistency for the dish.
Step 11
After 5–6 minutes, stir and add the chili.
Step 12
Add the chopped cilantro and stir.
Step 13
After a minute, transfer to a serving dish, sprinkle with sesame seeds, and add the fried fatback.
