
Chakhokhbili with Potatoes

The spices mentioned above are mandatory. You can also use additional spices: tarragon, mint, ground red pepper, coriander, khmeli-suneli, saffron — 1 teaspoon each.

- Onion 5 heads

- Salad Potatoes 4 pieces
- Tomatoes 0 lbs
- Butter 10 oz
- Chopped Sage Leaves 1 tablespoon
- Cilantro 1 tablespoon
- Basil 1 tablespoon
- Red Long Chili Peppers 1 tablespoon
- Minced garlic 1 tablespoon
Step-by-Step Guide
Step 1
Blanch the tomatoes, peel them, and cut into 2 or 4 pieces. Cut the potatoes into quarters and boil separately until half-cooked. Do not discard the broth, as it may be useful during the stewing process.
Step 2
Cut the chicken into pieces, place it in a heated pot, and stew under a closed lid over low heat for 5 minutes. Then drain the released juice into a separate container. Slightly salt the chicken and continue cooking for 10 minutes with the lid open, gradually adding the juice to prevent the chicken from burning. Add the sautéed onion and stew for 5 minutes. If there is little liquid, gradually pour in the broth (no more than 1 cup per 1 kg of meat) and add a piece of butter.
Step 3
First add the tomatoes, then the potatoes. Stew everything together for 30–35 minutes. At the end of stewing, add the spices.
