Chakhokhbili with Green Beans

Ingredients

  • Salad Potatoes 25 oz
  • Lamb 20 oz
  • Tomatoes 5 oz
  • Eggplants 10 oz
  • Onion 1 head
  • Chinese green beans 5 oz

Step-by-Step Guide

Step 1

Wash the lamb and cut it into small pieces (2–3 pieces per serving), place it in a metal or preferably a clay pot (2–3 liters capacity).

Step 2

Add finely chopped onion, peeled and sliced potatoes, halved tomatoes, cleaned and finely chopped green bean pods, diced eggplants, and parsley or cilantro; season with salt, sprinkle with pepper, and pour in 2 cups of water.

Step 3

Cover the pot with a lid and place it in the oven for 1.5–2 hours to stew.

Step 4

Serve chakhokhbili in the same pot in which it was cooked (do not transfer to a serving dish).
