Chakhokhbili with Chicken

Ingredients

  • Ground coriander 1 bunch
  • Poultry 1½ kg
  • Butter 4 spoons
  • Parsley 1 bunch
  • Basil 1 bunch
  • Garlic 3 cloves
  • Khmeli-suneli 1 tablespoon
  • Salt a pinch
  • Tomatoes 5 pieces
  • Onion 5 heads

Step-by-Step Guide

Step 1

Wash the chicken, pat it dry, and cut it into small pieces using a sharp knife. Heat a deep skillet well, and add the pieces of chicken. Sauté for 10-15 minutes over medium heat, allowing them to develop a golden crust.

Step 2

Wash the tomatoes, blanch them in boiling water, and peel off the skin. Dice them into small cubes and add to the chicken. Cover with a lid and simmer for 8–10 minutes.

Step 3

Slice the onion into quarter rings. In a separate pan, melt the butter and sauté the onion until golden brown, then add it to the chicken with the tomatoes.

Step 4

Wash the herbs, dry them, and chop finely. Peel and mince the garlic. Add the herbs, garlic, and khmeli-suneli to the skillet with the chakhokhbili. Season with salt to taste. Serve the dish hot.
