Description
Chicken and vegetable stew becomes chakhokhbili thanks to khmeli-suneli. This spice blend includes Imeretian saffron, marjoram, and dill, while the full version of the seasoning consists of twelve different spices. Chakhokhbili is enjoyed with lavash and without sauce.
Ingredients
- Poultry 1 piece
- Onion 4 heads
- Tomatoes 0 lbs
- Mild Chili Spice 1 piece
- Garlic 4 cloves
- Cilantro 0 oz
- Basil 0 oz
- Khmeli-suneli 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Cut the chicken into portion-sized pieces: drumsticks, thighs, wings, and cut the breasts into two or three parts.
Step 3
Make a shallow crosswise cut on the tomatoes.
Step 4
Submerge the tomatoes in boiling water for 30 seconds, then transfer them to ice water.
Step 5
Peel the tomatoes and cut them into large chunks.
Step 6
Cut the onion and pepper into strips.
Step 7
In a pot, sauté the onion in vegetable oil until golden brown.
Step 8
Add the chicken, tomatoes, and bell pepper, stir well, cover with a lid, and simmer for 30-40 minutes. If the vegetables haven't released enough moisture, add a little water.
Step 9
Chop the cilantro and basil, add them to the pot along with the minced garlic, salt, pepper, and khmeli-suneli. Stir and simmer for another 7–10 minutes.
Step 10
Serve the chakhokhbili hot.
