Cauliflower with Yellow Lentils and Coconut Curry
Ingredients
- Vegetable Oil 1 tablespoon
- Onion 1 head
- Ginger ½ teaspoon
- Red curry paste 3 tablespoons
- Yellow Lentils 5 oz
- Vegetable Broth 1½ liters
- Shredded Coconut 3 tablespoons
- Cauliflower 1 piece
- Basmati rice to taste
- Chopped Cilantro (Coriander) a pinch
- Mango Chutney to taste
- White bread to taste
- Garlic 2 cloves
Step-by-Step Guide
Step 1
Heat the oil in a large skillet, then add the onion, garlic, and ginger.
Step 2
Sauté for 5 minutes, add the curry paste, then lightly fry for 1 minute before adding the lentils, broth, and coconut. Bring the mixture to a boil and cook for 40 minutes or until the lentils are soft.
Step 3
During the last 10 minutes of cooking, add the cauliflower. Divide the rice among 4 plates, top with the curry, and sprinkle with cilantro leaves and coconut. Serve with mango chutney and bread.
