Cauliflower with Potatoes and Coconut
Ingredients
- Young Potatoes 20 oz
- Sunflower Oil 2 tablespoons
- Black Mustard Seeds 1 teaspoon
- Cumin Seeds 1 teaspoon
- Dried chili peppers 2 pieces
- Green Chili Pepper 1 piece
- Cauliflower 1 head
- Lemon Juice 1 tablespoon
- Shredded Coconut 2 tablespoons
- Cilantro 1 bunch
Step-by-Step Guide
Step 1
Cut the potatoes in half. Boil them in a pot of salted boiling water for 10 minutes. Drain the water. Slightly mash with the back of a fork. Do not crush.
Step 2
Heat the oil in a large skillet, then add the spices and dried peppers. Sauté for a few minutes until the spices and peppers darken.
Step 3
Add the fresh chili pepper, chopped cauliflower, and a little salt. Stir and sauté for 3-4 minutes.
Step 4
Add to the warm potatoes and cook for 2-3 minutes until the cauliflower is tender.
Step 5
Stir in the lemon juice, coconut, and cilantro, and serve.
