Cauliflower with Paprika Sauce

Ingredients

  • Lemon ½ piece
  • Cauliflower 5 lbs
  • Milk 15 fl oz
  • Butter 5 oz
  • Olive Oil 3 tablespoons
  • Onion 1 head
  • Garlic 1 clove
  • Bay leaf 1 piece
  • Wheat Flour 2 tablespoons
  • Chicken Broth 15 fl oz
  • Champagne Vinegar 2 tablespoons
  • Capers 3 tablespoons
  • White bread 0 oz
  • Salt to taste

Step-by-Step Guide

Step 1

Separate the florets, rinse the cauliflower in cold water with the juice of half a lemon. Bring a large pot of salted water to a boil, add the cauliflower and a bit of milk, and cook uncovered for 20 minutes until the cauliflower is tender. Drain the water, being careful not to damage the florets, rinse under cold water, and place on a paper towel to dry.

Step 2

Melt 25 grams of butter in a saucepan, adding a bit of olive oil. Add finely chopped onion and cook over low heat, stirring, for 5 minutes until the onion is soft. Add the clove of garlic and bay leaf, and cook for a few more minutes, then remove the saucepan from the heat. Stir the flour into the broth. Add paprika to the sautéed onion and immediately pour in the broth. Add the milk and vinegar. Return the saucepan to the stove and cook over low heat, stirring, for 5-6 minutes. Season with salt.

Step 3

Pour a bit of sauce into a baking dish and sprinkle half of the finely chopped capers. Then layer the cauliflower florets, pour the remaining sauce over, and sprinkle the remaining capers. Top with breadcrumbs and pieces of the remaining butter.

Step 4

Bake for 10-15 minutes at 355°F until the crust is golden brown. Remove the dish from the oven, take out the garlic and bay leaf, and serve immediately in the same dish.
