Cauliflower with Curry and Cilantro
Ingredients
- Fresh Cilantro 0 oz
- Cauliflower 30 oz
- Olive Oil 1½ tablespoons
- Onion 1 head
- Curry Powder 1 teaspoon
- Red pepper flakes a pinch
- Plain Yogurt ¼ cup
- Water ¼ cup
- Lime Juice 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Break the cauliflower into florets. In a 30 cm skillet, heat the oil over medium-high heat. Add the cauliflower and sauté for about 3 minutes. Then add the chopped onion and continue cooking for 5 minutes until it becomes soft and the cauliflower is browned.
Step 2
Add the curry powder and red pepper flakes, and sauté for another 2 minutes. Reduce the heat and add the yogurt and water. Cover and cook for approximately 6 minutes until the cauliflower is tender.
Step 3
Remove from heat, sprinkle with chopped cilantro, drizzle with lime juice, and season with salt and ground black pepper.
