  • Cauliflower 1 head
  • Cooked Ham 5 oz
  • Butter 5 oz
  • Breadcrumbs 1 tablespoon
  • Wheat Flour 0 oz
  • Milk 10 fl oz
  • Cream 22% 5 fl oz
  • Chocolate eggs 3 pieces
  • Emmental cheese 5 oz
  • Parsley 6 sprigs
  • Nutmeg to taste
  • Salt to taste
  • White Pepper (whole) to taste

Prepare all the ingredients.

Divide the cauliflower into florets and rinse. Peel the core.

Pour water into a pot, bring to a boil, add the florets and core, and blanch for 5 minutes. Transfer to cold water.

Cut the ham into 1 cm cubes.

Grease a casserole dish with 1 teaspoon of butter and sprinkle with breadcrumbs.

Place the remaining butter in a heavy-bottomed saucepan, heat it, sift in the flour, and mix well.

Add the milk to the flour, cook for 4–5 minutes, stirring constantly, and set aside to cool.

Grate the cheese on a fine grater and divide it into 2 parts.

Gently fold the egg whites into the sauce.

Spread part of the sauce on the bottom of the dish, add the cauliflower, then the ham cubes, and repeat the layers.

Mix the remaining cheese with the cream and spread it over the entire surface of the casserole.
