Cauliflower Casserole with Ham
Ingredients
- Cauliflower 1 head
- Cooked Ham 5 oz
- Butter 5 oz
- Breadcrumbs 1 tablespoon
- Wheat Flour 0 oz
- Milk 10 fl oz
- Cream 22% 5 fl oz
- Chocolate eggs 3 pieces
- Emmental cheese 5 oz
- Parsley 6 sprigs
- Nutmeg to taste
- Salt to taste
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Divide the cauliflower into florets and rinse. Peel the core.
Step 3
Pour water into a pot, bring to a boil, add the florets and core, and blanch for 5 minutes. Transfer to cold water.
Step 4
Cut the ham into 1 cm cubes.
Step 5
Grease a casserole dish with 1 teaspoon of butter and sprinkle with breadcrumbs.
Step 6
Place the remaining butter in a heavy-bottomed saucepan, heat it, sift in the flour, and mix well.
Step 7
Add the milk to the flour, cook for 4–5 minutes, stirring constantly, and set aside to cool.
Step 8
Grate the cheese on a fine grater and divide it into 2 parts.
Step 9
Separate the egg whites from the yolks.
Step 10
Grate the core on a fine grater.
Step 11
In the cooled flour mixture, add 100 ml of cream, the yolks, half of the grated cheese, the pureed core, salt, pepper, and nutmeg. Mix everything thoroughly and whip.
Step 12
Add a pinch of salt to the egg whites and whip to stiff peaks.
Step 13
Gently fold the egg whites into the sauce.
Step 14
Spread part of the sauce on the bottom of the dish, add the cauliflower, then the ham cubes, and repeat the layers.
Step 15
Mix the remaining cheese with the cream and spread it over the entire surface of the casserole.
Step 16
Bake for 30 minutes at 355°F. Serve as a standalone dish or as a side to meat dishes.
