Description

To simplify wrapping the fish in foil, you can tie the stuffed belly with kitchen twine beforehand. Don't unwrap the head if you don't want to dine with Mickey.

  • Catfish 1 piece
  • Pitted olives 5 oz
  • Light Raisins, Seedless 5 oz
  • Garlic 1 head
  • Mild Chili Spice 1 piece
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Start a fire or light charcoal.

Step 2

Gut and rinse the fish. Rub salt inside and out.

Step 3

Lay out enough foil for wrapping on a flat surface and place the catfish on it, belly side up.

Step 4

Peel the garlic cloves and crush them with the flat side of a knife. Slice the chili pepper into thin rings, removing the seeds and stem first.

Step 5

Evenly distribute the dates, raisins, garlic, and chili pepper along the length of the fish, with most of it inside.

Step 6

Arrange the fire and build a cradle of coals the length of the catfish.

Step 7

Wrap the fish in foil and place it on the glowing coals dorsal side down. After half an hour, flip it over. Make sure the coals are glowing, not burning.

Step 8

After an hour of cooking, unwrap the foil and check the dish for doneness. Add pepper and salt if necessary.
