Casserole with eggplant, tomato, and pepper
Ingredients
- Onion 1 piece
- Carrot 1 piece
- Vegetable Oil 0 fl oz
- Eggplants 2 pieces
- Tomatoes 2 pieces
- Herbs 1 bunch
- Salt to taste
- Ground Black Pepper to taste
- Milk 5 fl oz
- Chicken Eggs 3 pieces
- Red Bell Pepper 1 piece
Step-by-Step Guide
Step 1
Chop the onion and carrot, and sauté them in oil.
Step 2
Add diced eggplants to the sauté. When they are browned, add diced tomatoes, bell pepper, herbs, salt, and pepper, and simmer for about 10–15 minutes.
Step 3
In a bowl, crack the eggs, add milk, mix, and pour this mixture over the eggplants.
Step 4
Place the dish with eggplants in the oven at medium heat (355°F) for about 15–20 minutes, until the mixture is baked to a golden crust.
Step 5
Serve the casserole with any side dish (mashed potatoes, pasta) or as a standalone dish. Optionally, sprinkle cheese on top.
