Ingredients
- Ground coriander 1 bunch
- Olive Oil 3 tablespoons
- Garlic 3 cloves
- Onion 1 piece
- Orange Bell Peppers 3 pieces
- New Potatoes 6 pieces
- King Prawns 12 pieces
- Mussels 8 pieces
- Squid 6 pieces
- TABASCO® to taste
- Dry White Wine 5 fl oz
- Passata Tomato Sauce 5 oz
- Butter 0 oz
- Ocean salt to taste
- Lemon-Pepper Mix to taste
Step-by-Step Guide
Step 1
For the tomato sauce: 1 onion, 2 cloves of garlic, 1 bunch of parsley, 1 carrot, 3 slices of bacon, 2 bay leaves, a pinch of sugar, 1/3 teaspoon of TABASCO, 300 ml of canned tomatoes.
Step 2
Cut the bacon into strips and fry it in a hot saucepan.
Step 3
Prepare the vegetables: slice the onion, garlic, and carrot. Add them to the bacon and sauté together until golden brown, about 8-10 minutes. Add the parsley, bay leaves, canned tomatoes, sugar, and TABASCO, and cook for 25-30 minutes. Pass the finished sauce with the remaining vegetables through a sieve.
Step 4
Rinse the shrimp and remove the digestive tract. Clean the squid, removing the membrane, and cut into rings. Clean the mussels of algae.
Step 5
Heat the olive oil in a wok and sauté the garlic and julienned onion. Add the green bell pepper, cut into long strips, and cook for 20 minutes until the pepper is tender.
Step 6
Add the seafood, then add TABASCO and wine, and let it evaporate a bit.
Step 7
Add the tomato sauce, the potatoes cut into wedges, and the butter. Adjust the dish with salt and simmer until the potatoes are cooked, about 25-30 minutes. Before serving, sprinkle with cilantro.
