Ingredients

  • Carrots 30 oz
  • Vegetable Broth 2 cups
  • Sugar 1 tablespoon
  • Coarse Salt to taste
  • Olive Oil to taste
  • Grated Ginger 1 teaspoon
  • Garlic 2 cloves
  • Orange Juice to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Combine the carrots, broth, sugar, and salt in a pot, bring to a boil over medium heat, and cook covered until the carrots are tender, about 20 minutes. Drain, reserving 1 cup of the cooking water.

Step 2

Heat the oil in a large skillet over medium heat. Add the ginger and garlic. Sauté, stirring, for 2–3 minutes until softened. Remove from heat and transfer to a food processor along with the carrots and orange juice; blend until smooth. Add 1–2 tablespoons of the reserved cooking water and adjust the mixture to a puree consistency. Season with salt and pepper; serve warm.
