
Carrot Patties with Oat Flakes

Description
This dish is vegetarian. When preparing carrot patties, you may add 2 tablespoons of oat or wheat bran.
Ingredients
- Carrots 20 oz
- Oat flakes 4 tablespoons
- Onion 5 oz
- Vegetable Oil 2 tablespoons
- Water 15 fl oz
- Mixed Ground Peppers a pinch
- Ground Paprika a pinch
- Salt to taste
- Breadcrumbs 5 oz
Step-by-Step Guide
Step 1
Grate the carrots on a coarse grater and slice the onion into thin strips. In a saucepan, heat the vegetable oil and sauté the vegetables until soft.
Step 2
Add water and bring to a boil.
Step 3
Remove from heat and blend until moderately smooth.
Step 4
Add the crushed flakes to the carrots, paprika, season with salt and pepper, and simmer, stirring constantly, over low heat until the oats swell.
Step 5
Let cool, shape into patties, coat in breadcrumbs, fry in a pan until the color changes, then place in an oven preheated to 170 °C for 4 minutes.
Step 6
You can serve the patties on a plate, add a couple of tablespoons of boiled quinoa, and garnish with arugula.
