  • Champagne Vinegar 2 tablespoons
  • Clove 2 pieces
  • Bay leaf 1 piece
  • Parsley 1 piece
  • Celery salt 1 piece
  • Green peppercorns 3 pieces
  • Dark Ale 15 fl oz
  • Rosé Dry Wine 5 fl oz
  • Cake crumbs 0 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Clean the carp, rinse it in cold running water, and cut it into portion-sized pieces.

Step 2

Mix the finely chopped onion with vinegar, salt, and pepper. Pour this mixture over the fish and let it marinate for about 1 hour.

Step 3

Meanwhile, finely chop the carrot, lemon zest, parsley root, and celery root, and add them along with the spices to a pot of boiling water. Cook over moderate heat for 40 minutes, then strain through a sieve.

Step 4

Add the beer, crushed breadcrumbs, raisins, and finely chopped almonds to the prepared broth, mix, and bring to a boil over moderate heat.

Step 5

Place the pieces of carp into the boiling beer mixture and cook for 15-17 minutes. Then pour half a glass of red wine into the pot and cook for another 3-4 minutes.
