Carp with Apples and Tarragon

Ingredients

  • Carp 1 piece
  • Pickled Apples 2 pieces
  • Onion 1 head
  • Lemon ½ piece
  • Tarragon 3 sprigs
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Salt the gutted fish and let it sit for about 20 minutes.

Step 2

While the fish is salting, prepare the filling. Peel the apples, lemon, and onion. Then cut everything into small, even cubes.

Step 3

Chop the tarragon.

Step 4

Rub the inside of the carp's belly with pepper and stuff it with the mixture of lemon, apples, onion, and tarragon.

Step 5

For extra security, you can pin the belly closed with a toothpick in a few places.

Step 6

Transfer the prepared carp to a roasting bag and cook in a preheated oven at 355°F, allowing 50 minutes of cooking time for each kilogram of fish.
