Caribbean Stew
Ingredients
- Vegetable Oil 3 tablespoons
- Oxtail 0 lbs
- Salt to taste
- Ground Black Pepper to taste
- Passata Tomato Sauce 3 tablespoons
- Grated Ginger Root 1 tablespoon
- Onion 2 heads
- Carrot 1 piece
- Celery stalk 1 piece
- Wheat Flour 2 tablespoons
- Campbell's Beef Broth 4 cups
- Clove 1 piece
- Thyme 4 sprigs
- Brown Sugar 1 tablespoon
- Worcestershire Sauce 1 tablespoon
- Scallions 4 sprigs
- Rice to taste
Step-by-Step Guide
Step 1
Heat the oil in a pot over high heat. Season the cut oxtails with salt and pepper. Place them in the hot oil and fry on both sides until golden brown. This will take about 5 minutes.
Step 2
Remove the fried oxtails to a plate and set aside. In the pot, add the tomato paste, ginger, chopped carrot, onion, and celery. Cook until the vegetables are soft. Then add the flour and cook for another 2 minutes.
Step 3
Return the fried oxtails to the pot, add the clove, thyme, and chili peppers. Pour in the broth. Bring to a boil, reduce the heat, cover, and simmer on low for about 1.5 hours.
Step 4
Add the sugar and Worcestershire sauce. Cook for another 5 minutes. Serve on plates, sprinkle with chopped onion, and enjoy with boiled rice. Bon appétit!
