Ingredients

  • Mild Chili Spice ⅓ cup
  • Ocean salt ½ cup
  • Sugar ½ cup
  • Water 0 qt
  • Peeled Cooked Shrimp 25 oz
  • Garlic 4 cloves
  • Vegetable Oil 4 tablespoons
  • Grated Ginger Root 1 piece (about 8 cm)

Step-by-Step Guide

Step 1

In a large bowl or pot, mix sea salt, sugar (⅓ cup), mild chili powder with 2 liters of warm water. Add the frozen shrimp to the liquid and let sit at room temperature for 20 minutes.

Step 2

While the shrimp are thawing and marinating, finely chop the garlic and slice the large piece of fresh ginger (about 8 cm) into thin strips (2–3 cm).

Step 3

Drain the water from the shrimp and pat dry with paper towels.

Step 4

Heat the oil in a skillet over medium heat. Add the garlic, ginger, and chili to the hot oil and sauté for 1 minute. Add the sugar (4 tablespoons) and continue to sauté until the garlic turns pale golden.

Step 5

Add the shrimp to the skillet with the garlic and ginger and stir-fry for 1–2 minutes. When the shrimp turn pink, immediately remove from heat and transfer to a plate.

Step 6

Serve hot or warm with lemon and herbs.
