Cantonese Lobster
Ingredients
- Lobster tails 5 lbs
- Peanut Butter 2 tablespoons
- Grated Ginger Root 3 teaspoons
- Scallions 4 pieces
- Ocean salt 1 teaspoon
- Chicken Broth 5 fl oz
- Soy Sauce 2 tablespoons
- Medium-dry sherry 2 tablespoons
Step-by-Step Guide
Step 1
Prepare the lobster by cutting it in half (move the knife from head to tail), carefully remove the meat from the body and claws, and discard the rest.
Step 2
Sauté the lobster meat in a wok for about five minutes. Pat the pieces dry with a paper towel.
Step 3
Leave a little oil in the wok (about one tablespoon), and drain the rest.
Step 4
Pour the broth and sherry into the pan, add grated ginger, chopped onions, peanut oil, and salt. Bring to a boil.
Step 5
Return the lobster to the wok (for about five minutes, so it absorbs the mixture).
Step 6
Transfer the lobster meat to a plate, drizzle with soy sauce, and serve.
