Cajun Spiced Chicken with Couscous
Ingredients
- Poultry 1 piece
- Spices 4 tablespoons
- Olive Oil to taste
- Chicken Broth 5 fl oz
- Couscous 5 oz
- Lime 4 pieces
- Fresh Mint 1 bunch
- Parsley 1 bunch
- Tomatoes 5 pieces
- Salt to taste
- Ground Black Pepper to taste
- Courgette ½ piece
Step-by-Step Guide
Step 1
Rub the chicken with spices, salt, and black pepper. Skewer with metal skewers. Drizzle with olive oil and grill for about 20 minutes, turning once.
Step 2
In a pot, pour in the chicken broth, bring to a boil, add the couscous, and cook for 2 minutes. Cover and keep warm. Before serving, stir in the juice of 3 limes, 3 tablespoons of olive oil, and the herbs.
Step 3
Finely chop the tomatoes and cucumber and mix with 3 tablespoons of olive oil and the zest of 1 lime.
Step 4
On a plate, arrange the chicken, with couscous and salad around it. Cut the lime into wedges.
