Ingredients
- Bacon 5 oz
- Leek 1 stalk
- Oyster Mushrooms 20 oz
- Scorpion fish fillet 30 oz
- Thyme 0 oz
- Ginger 0 oz
- Citrus Zest Mix 0 oz
- 10% cream 5 fl oz
- Dill 4 stalks
- Salt to taste
Step-by-Step Guide
Step 1
Cut the fillet into four pieces. Wrap each piece in three strips of bacon, placing the next strip over the previous one as the first one ends, creating a continuous spiral of bacon. Place on a baking sheet and bake in an oven preheated to 430°F for ten minutes.
Step 2
Coarsely chop the leeks (the white part and a little green) and the oyster mushrooms. Place butter, mushrooms, finely chopped thyme, and salt in a pot to draw out moisture. Sauté for a minute, then add the leeks and stir until the mixture becomes slightly wilted. After that, add the zest along with finely chopped ginger and garlic to the pot, mix well, and remove from heat.
Step 3
Heat the cream in a saucepan over low heat and let it simmer for ten minutes until it thickens.
Step 4
Arrange the fish on a plate, place the mushrooms alongside, and garnish with cream and dill.
