
Butcher's Steak on the Grill

Ingredients
- Beef diaphragm 10 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients. Light the charcoal in the grill.
Step 2
Shift some of the coals to the side under the grill so that there is less heat under half of the grill.
Step 3
Season the steak with salt and pepper on both sides.
Step 4
Transfer the steak to the part of the grill where the coals are still hot.
Step 5
Fry for about 4 minutes, turning often.
Step 6
Transfer the steak to the cooler section of the grill and measure the internal temperature of the meat. It should be around 110°F.
Step 7
If the temperature is below 42 degrees, return the steak to the hot part of the grill and cook it for a couple more minutes on both sides.
Step 8
Transfer the steak to a cutting board and let it rest for a few minutes. During this time, it will finish cooking.
Step 9
Season the steak again with salt and pepper while it rests. After a few minutes, you can check the internal temperature of the meat again; 115°F is the medium rare doneness.
Step 10
Slice the steak into thin pieces.
Step 11
Serve the butcher's steak with salt and pepper.
