Burgers' Braised Cabbage with Sausages and Rosemary

Ingredients

  • Semi-Smoked Sausage 20 oz
  • Onion 1 head
  • Sauerkraut 0 lbs
  • Garlic 3 cloves
  • Fresh Rose Hips 2 sprigs
  • Duck Fat 2 tablespoons
  • Vegetable Oil 4 tablespoons

Step-by-Step Guide

Step 1

Finely chop the peeled garlic.

Step 2

Slice the onion into quarter rings. In a deep skillet heated with vegetable oil, add the onion and garlic and sauté for 1–2 minutes until soft.

Step 3

Place the cabbage on a cutting board and roughly chop it a few times with a knife at intervals of 4–5 cm (as it is usually shredded into long 'strands') and add it to the skillet, mixing well.

Step 4

Add the duck fat, mix, and braise the cabbage covered. If the fat was frozen, place it on top, cover with a lid, and wait for it to melt, then mix. Braise the cabbage for about 20 minutes on low heat, stirring occasionally. When the skillet becomes dry, add a little hot water to avoid drowning it in oil.

Step 5

Meanwhile, slice the sausages into rounds.

Step 6

Remove the leaves from the rosemary stems and chop finely.

Step 7

Add the sausages and rosemary to the cabbage and continue to braise for another 40 minutes (in total, the cabbage should braise for at least an hour until it reaches a confident golden-brown color). Serve immediately.
