Bulgur with pumpkin

Ingredients

  • Bulgur 1 glass
  • Onion 1 piece
  • Garlic 3 cloves
  • Tomatoes 2 pieces
  • Pumpkin 15 oz
  • Turmeric ¼ spoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

Dice the pumpkin and onion, and roughly chop the garlic.

Step 2

Pour water over the bulgur, using an amount that is one and a half to two times the volume of the bulgur. Cover with a lid and cook over medium heat for 10 to 15 minutes. Don't forget to add salt.

Step 3

Sauté the garlic in vegetable oil for 3–4 minutes.

Step 4

Add the pumpkin and onion, and sauté everything together until halfway cooked.

Step 5

Meanwhile, we remove the skin from the tomatoes. It will be easier to do this if you score them with a cross and blanch them in boiling water.

Step 6

Dice the tomatoes.

Step 7

Add to the pumpkin and onion, and sauté everything together for about 5 minutes.

Step 8

Add the cooked bulgur and spices.

Step 9

Stir everything together and cook for another 10–15 minutes.
