Brown Rice with Brussels Sprouts
Ingredients
- Salt to taste
- Brown Rice 1¼ cups
- Water 2½ cups
- Brussels Sprouts 15 oz
- Lemon Zest ½ teaspoon
- Lemon Juice 1 tablespoon
- Minced garlic 1 clove
- Chopped roasted hazelnuts ½ cup
- Grated Parmesan cheese 0 oz
- Chopped Parsley ½ cup
- Olive Oil ½ cup
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Rinse the rice with water, bring to a boil, and simmer on low heat until tender, about 35 minutes. All the liquid should be absorbed during this time.
Step 2
While the rice is cooking, separate the Brussels sprouts into small florets and mix them in a separate bowl with salt, lemon zest, and lemon juice.
Step 3
Then add the mixture to the cooked rice, stir in the remaining ingredients until evenly distributed, season with salt and pepper to taste, and serve.
