Broccolini with Crunchy Breadcrumbs and Cheese

Ingredients

  • Rye Bread 1 piece
  • Dried Arbol Chili Peppers 4 pieces
  • Olive Oil 5 tablespoons
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Broccoli 15 oz
  • Grated Parmesan cheese 4 tablespoons
  • Cheddar cheese 5 oz

Step-by-Step Guide

Step 1

In a blender, chop the bread and 2 chili peppers into coarse crumbs (about the size of a pea). (You should have about 1½ cups.) Transfer the crumbs to a small bowl. Mix with 2 tablespoons of olive oil; season with salt and pepper.

Step 2

Heat a medium skillet over medium heat and toast the breadcrumbs, stirring frequently, until dry and golden, about 5 minutes; remove from heat.

Step 3

Preheat the oven to 220˚C. Toss the broccolini on a rimmed baking sheet with 2 tablespoons of oil and season with salt and pepper. Roast, stirring occasionally, until tender and bright green, 5–8 minutes. Allow to cool slightly. Transfer the broccolini to a medium bowl and mix with 2 tablespoons of Parmesan cheese and the remaining chili pepper; season with salt and pepper.

Step 4

Place half of the broccolini on the baking sheet and sprinkle with half of the cheddar cheese. Add the remaining broccolini and top with the cheddar cheese. Sprinkle with breadcrumbs and 2 tablespoons of Parmesan. Bake for 10–15 minutes until the breadcrumbs are golden and the cheese is melted.
