- Romaine lettuce 1 head
- Farm fresh eggs 2 pieces
- Egg white 1 piece
- 33% Cream 5 fl oz
- Salted Butter 0 oz
- Grated Pecorino Pepato Cheese 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the broccoli in salted boiling water for 10 minutes. After 5 minutes, add the romaine lettuce.
Step 2
Preheat the oven to 355°F.
Step 3
In a deep bowl, mix the broccoli with the eggs, cream, and parmesan, season with salt and pepper. Divide the mixture into portioned ramekins and cook in a water bath in the oven for 20 minutes.
Step 4
Warm the romaine lettuce with the butter, strain through a sieve, and spread it over the broccoli flan.
