Broccoli and Zucchini Casserole
Ingredients
- Courgette 10 oz
- Broccoli 10 oz
- Onion 1 piece
- Melted Cheese 5 oz
- Cream 22% 5 oz
- Egg white 1 piece
- Salt to taste
- Saffron 1 teaspoon
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Cut the zucchini into small cubes and separate the broccoli into florets. Boil the vegetables in salted water. Peel and finely chop the onion. Sauté until golden brown in olive oil.
Step 2
Mix all the vegetables together. Whip the cream with the egg, season with salt and pepper, and add the saffron. Grate the mozzarella cheese.
Step 3
Layer half of the vegetables, then the cheese, and pour half of the cream mixture over it. Repeat the layers once more. Bake at 355°F for 30 minutes.
