Ingredients
- Eggplants 3 pieces
- Courgette 2 pieces
- Sweet Pepper 2 pieces
- Tomatoes 3 pieces
- Potato 3 pieces
- Sweet Red Onion 1 piece
- Olive Oil ¾ glasses
- Feta cheese 10 oz
- Salt to taste
- Parsley ½ bunches
- Herbes de Provence to taste
- Garlic 3 cloves
Step-by-Step Guide
Step 1
Thoroughly rinse the vegetables and peel the potatoes. Cut the bell pepper, eggplant, zucchini, and potatoes into cubes. Slice the onion into rings.
Step 2
Mix the oregano with the oil and crushed garlic. Drizzle the mixture over the vegetables and place them in the oven at 390°F for 20–25 minutes.
Step 3
Blanch the tomatoes in boiling water and peel them. Then, chop them into cubes. Spread them over the vegetables and return to the oven for another 20 minutes.
Step 4
Sprinkle with feta cheese and herbs, then return to the oven for 15 minutes, until the feta begins to brown. It's best to use the broiler to avoid overcooking the stew.
