Description

Bretton Style Ribeye is a delightful dish that showcases the rich flavors of grilled ribeye steak, seasoned with a blend of herbs and spices. This dish is typically served with a side of roasted vegetables and a creamy sauce, making it a perfect choice for a special dinner. Enjoy the tender, juicy meat that melts in your mouth, inspired by the culinary traditions of Brittany.

Ingredients

  • Butter 0 oz
  • Onion 0 oz
  • Vegetable Oil 0 fl oz
  • Veal Tenderloin 20 oz
  • Parsley to taste
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Lightly pound the meat, season it with salt and pepper, drizzle with vegetable oil, and let it rest on a plate for half an hour. Place it in a skillet or roasting pan with hot melted butter and sear on both sides until a crispy crust forms, making sure the inside of the ribeye remains slightly rare.

Step 2

Mix the butter with the onion, parsley, and a pinch of pepper. Spread the resulting green butter over the bottom of a deep dish, place the ribeye steak on top, cover with a plate, and place the dish in a water bath for 5–7 minutes.

Step 3

Drizzle with the meat juices from the skillet and serve with mashed potatoes.
