Ingredients
- Sea Bass 1 piece
- Butter 0 oz
- Tarragon 0 oz
- Dill 0 oz
- Chervil 0 oz
- Wheat Flour to taste
- Chicken Egg 1 piece
- Breadcrumbs to taste
- Lemon to taste
- Salt to taste
- Ground Black Pepper to taste
- Fennel to taste
Step-by-Step Guide
Step 1
First, prepare the perch: scale the fish, gut it, remove the gills, and trim the fins.
Step 2
Carefully separate the fillet along the backbone, avoiding cutting through the skin. Use scissors to cut out and remove the backbone. Rinse under cold water.
Step 3
Then mix the softened butter with finely chopped herbs (tarragon, dill, chervil).
Step 4
Place the perch skin-side down, season with salt and pepper, and spread butter along the entire length of the fish. Tightly wrap the fillet and secure it with wooden skewers.

Coat in flour, then dip in egg.

Finally, coat in breadcrumbs. Be careful not to cover the head and tail.
Step 7
Fry the perch in a large amount of oil heated to 340°F for 6 to 7 minutes.

Place the cooked fish on paper towels to remove any excess fat.

Remove the skewers from the fish. Serve with a slice of lemon and a salad of herbs and fennel.
