Braised Shoulder in Thick Sauce
Ingredients
- Lamb Shoulder 5 lbs
- Onion 30 oz
- Tomatoes 20 oz
- Thyme 0 oz
- Rosemary 0 oz
- Green peppercorns 2 pieces
- Chicken Broth 25 fl oz
- Vegetable Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Cut the shoulder into large pieces, about 4–5 cm.
Step 3
Heat a skillet with vegetable oil over medium heat.
Step 4
Sear the meat on all sides until golden brown, about 10 minutes.
Step 5
Add the chopped onion and continue cooking, stirring, for another 5 minutes.
Step 6
Add the chopped tomatoes, thyme, rosemary, and pepper. Braise for 10 minutes until the vegetables soften.
Step 7
Pour in the broth, reduce the heat to low, cover with a lid, and simmer for 30 minutes (or 60 minutes if the meat is tough).
Step 8
Remove the lid, season with salt and pepper to taste, and stir. Check for doneness: the meat should be tender, and the sauce thick and rich.
Step 9
Serve the dish hot in the sauce, with mashed potatoes, polenta, or fresh bread.
