Braised Savoy Cabbage with Bacon

Ingredients

  • White Cabbage 5 lbs
  • Bacon 5 oz
  • Onion 1 piece
  • Carrot 2 pieces
  • Bay leaf 2 pieces
  • Chicken Broth 15 fl oz
  • Salt to taste

Step-by-Step Guide

Step 1

Remove the outer leaves of the cabbage, cut the head into 4 parts, and remove the core, then slice the leaves into strips about 2 cm wide. Rinse well. Bring a large pot of salted water to a boil, add the cabbage, submerge it with a spoon, allow the water to boil again, reduce the heat, cover the pot, and cook for 30 minutes until the cabbage is tender. Drain and dry in a colander.

Step 2

Heat the butter in a pot, add the bacon, and cook over low heat, stirring, for 5 minutes until it is browned. Remove from the pan and set aside. Add the sliced onion and cook over low heat for 5 minutes until it becomes soft and translucent. Then add the thinly sliced carrot, cabbage, half of the bacon, and mix well.

Step 3

Pour in the broth, add the remaining bacon and bay leaf. Cover with a lid and simmer over low heat, stirring, for about 1.5 hours. Serve immediately.
