- Garlic 2 cloves
- White Beans 30 oz
- Baking Tomatoes 30 oz
- Dijon Mustard 2 teaspoons
- Sweet Potato 25 oz
- Olive Oil 2 tablespoons
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Sauté the sausages in a large skillet over medium heat for 5-7 minutes until golden brown. Cut into 5 cm pieces and transfer to a 4-liter pot. Add minced garlic, beans, tomatoes, mustard, and 2 tablespoons of water, and season with salt. Mix well and cover with a lid. Place in the oven.
Step 3
Meanwhile, cut the sweet potato into small cubes and mix with olive oil. Spread in a baking dish and sprinkle with salt. Place in the oven along with the pot and roast for 25 minutes.
Step 4
Open the pot and return it to the oven for another 10-15 minutes. Ensure the sweet potatoes are soft and slightly golden. Serve, garnished with parsley.
