Ingredients
- Sugar ⅓ cup
- Chicken Broth ¾ cup
- Fish Oil ⅓ cup
- Shallot 3 pieces
- Scallions 3 pieces
- Ground Black Pepper 1 teaspoon
- Pork Blood 20 oz
Step-by-Step Guide
Step 1
Pound the pork, cut it into cubes (2.5 cm), place it in a bowl, sprinkle with black pepper, and mix.
Step 2
Finely chop the shallots and garlic. Cut the green onions diagonally, separating the green leaves from the white part.
Step 3
In a heavy pot over medium heat, melt the granulated sugar. When it starts to liquefy, stirring with a fork, bring it to a dark golden liquid caramel state, then immediately pour in the broth and fish sauce. Cook, stirring constantly, until the caramelized sugar that has hardened from contact with the broth and fish sauce melts.
Step 4
Once the burnt sugar has completely dissolved, add the shallots, garlic, and the white part of the green onions to the pot and simmer, stirring occasionally, for 4 minutes.
Step 5
Add the meat to the pot, stir, bring to a boil, reduce the heat, cover the pot, and simmer for about 1.5 hours, stirring occasionally and checking the meat's doneness.
Step 6
Mix the cooked pork with the green onions and serve with white rice.
