Ingredients
- Meat 20 oz
- Quince 0 lbs
- Onion 3 heads
- Cilantro 1 cup
- Ground Black Pepper ½ teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Cut the fatty lamb or beef into small pieces, add sliced onions, salt, pepper, and chopped herbs, and mix everything together. Cut the quince, which has had its core removed, into wedges. Place pieces of meat at the bottom of a pot, layer the quince wedges on top, add a little water, and simmer covered for about 1 hour, without stirring.
Step 2
You can serve boiled beans or peas, fresh vegetables, and herbs as a side dish.
