Braised Lamb with Chickpeas

Ingredients

  • Onion 2 heads
  • Lamb 8 pieces
  • Vegetable Oil 1 tablespoon
  • Garlic 2 cloves
  • Harissa 1 tablespoon
  • Cinnamon 1 piece
  • Chickpea 20 oz
  • Baking Tomatoes 30 oz
  • Olives stuffed with lemon 5 oz
  • Citrus Zest Mix ½ tablespoon
  • Fresh Mint 2 tablespoons
  • Spices to taste

Step-by-Step Guide

Step 1

Heat the oil in a large pot over medium heat and sauté the pieces of lamb until browned. Add the onion and garlic and sauté for 2-3 minutes until the onion is soft.

Step 2

Add the harissa, cinnamon, and spices. Stir and add the tomatoes, bringing to a boil. Cover and simmer until the liquid evaporates, about 50 minutes.

Step 3

Add the chickpeas, olives, and zest to the pot. Sprinkle with spices and simmer for another 20-30 minutes without covering. The meat should be very tender and easily pull away from the bones. Skim off the floating orange oil with a spoon, then sprinkle with mint.
