Braised Chicken with Ginger and Star Anise
Ingredients
- Sichuan pepper 1 teaspoon
- Peanut Butter 2 tablespoons
- Grated Ginger Root 1 piece
- Garlic 2 cloves
- Skin-On Chicken Breasts 0 lbs
- Apple Wine 4 tablespoons
- Honey 1 tablespoon
- Soy Sauce 3 tablespoons
- Star anise 1 piece
- Rice to taste
- Pickled Chanterelles 5 oz
Step-by-Step Guide
Step 1
Heat a wok over medium heat, add Sichuan peppercorns and cook for 2-4 minutes. Transfer to a plate and lightly crush.
Step 2
Reheat the wok, pour in the oil and spread it across the pan. Add sliced ginger and garlic and cook for 1-2 minutes over low heat until golden. Add cleaned and sliced mushrooms. Stir-fry, stirring constantly, for at least 3-4 minutes. Add the chicken breast, increase the heat to medium, and fry for 3 minutes until golden brown.
Step 3
Add the pepper, wine, honey, soy sauce, and star anise. Reduce the heat, cover with a lid, and simmer for 20 minutes until the chicken is tender.
Step 4
Serve with boiled rice.
