Braised chicken with eggplants and crispy onions
Ingredients
- Olive Oil 4 tablespoons
- Chicken fillet 20 oz
- Onion 2 heads
- Eggplants 2 pieces
- Dry White Wine 0 fl oz
- Tomatoes 5 oz
- Wheat Flour 4 tablespoons
- Vegetable Oil 5 tablespoons
- Garlic 4 cloves
- Herbs 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Sauté the chicken fillet in olive oil until golden brown, seasoning with salt and pepper.
Step 2
Remove the chicken, and in the remaining oil, sauté the chopped onion, garlic, and tomatoes.
Step 3
Add salt, return the chicken fillet to the pan, add chopped herbs, pour in broth and white wine, and simmer for about 40 minutes.
Step 4
Slice the eggplants into strips, salt them, coat in flour, and fry in a large amount of oil.
Step 5
Coat the sliced onion in flour and fry until crispy.
Step 6
Place the braised chicken fillet on a serving dish, drizzle with the sauce it was braised in, and arrange the eggplants and onion rings around it.
