Ingredients
- White Cabbage 0 lbs
- Spicy salami 20 oz
- Mustard Greens 1 tablespoon
- Saffron ½ teaspoon
- Butter 5 oz
- Salt 1½ teaspoons
- Sugar 2 teaspoons
Step-by-Step Guide
Step 1
Cut the cabbage in half lengthwise. Remove the core.
Step 2
Slice each half into strips about 1.5–2 centimeters wide. Cut the strips crosswise to create square pieces of cabbage.
Step 3
Place the chopped cabbage into a pot, add the butter, 1 cup of water, salt, and sugar, and simmer covered over medium heat. After 5–10 minutes, add the saffron and stir.
Step 4
Cut the salami into squares as well to maintain the style.
Step 5
Add to the skillet and sprinkle with a tablespoon of mustard seeds. Sauté without oil (salami is fatty by definition) for about 3–4 minutes.
Step 6
After 30 minutes of braising the cabbage, add the sautéed salami to the pot and simmer for another 5 minutes, stirring.
