  • Sauerkraut 20 oz
  • White Cabbage 10 oz
  • Onion 5 oz
  • Carrot 5 oz
  • Dry White Wine 15 fl oz
  • Ground Black Pepper 0 oz
  • Bay leaf 0 oz
  • Salt to taste
  • Pork fat 5 oz
  • Black Cumin (Cumin) 0 oz
  • Sugar 0 oz
  • Butter 5 oz

Step-by-Step Guide

Step 1

Cut all the vegetables and bacon into thin strips.

Step 2

Heat the cast-iron pot, melt some butter in it, and fry the bacon until crispy.

Step 3

Add the vegetables to the lard: start with the onions, lightly salting them, then add the carrots and cabbage. Add the bell pepper and, if needed, salt again.

Step 4

When the cabbage becomes translucent, add the wine, cover the pot with a lid, and place it in the oven preheated to 355°F until the wine evaporates. Then reduce the heat to 265°F and simmer for a couple of hours.

Step 5

Then add the cumin and sugar. Stir, cover again, and let it simmer for another 20 minutes.
