Braised beef with red wine and orange zest
Ingredients
- Grapeseed Oil 2 spoons
- Lamb Neck Fillet 30 oz
- Onion 15 oz
- Carrot 15 oz
- Red Grape Juice 25 fl oz
- Salt 2 spoons
- Oranges 1 piece
- Ground Black Pepper 1 tablespoon
Step-by-Step Guide
Step 1
Rub a large piece of beef fillet with salt and pepper, and place it in a large pot or deep skillet with hot oil. Sear the meat on all sides over medium heat for 8-10 minutes, then transfer it to a plate.
Step 2
In the same container where the meat was, add roughly chopped onion and carrot, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper, and sauté for 8-10 minutes. Then, add red wine and orange peel cut into thin wedges (1 cm thick) to the mixture.
Step 3
Bring the liquid to a boil and add the meat. Bring it back to a boil, then cover the pot with a lid and remove it from the heat.
Step 4
After 5 minutes, place the pot on the middle rack of the oven preheated to 345°F. Cover and braise the meat. Cooking time is 2-3 hours.
Step 5
Cut the cooked beef into portions. Serve it with the vegetables it was braised with.
