Braised Beef with Potatoes

Ingredients

  • Beef 5 lbs
  • Wheat Flour 5 oz
  • Olive Oil to taste
  • Onion 1 piece
  • Garlic 1 clove
  • Carrot 2 pieces
  • Campbell's Beef Broth 0 qt
  • Thyme 2 tablespoons
  • Salad Potatoes 25 oz
  • Clarified Butter 0 oz
  • Ocean salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 320°F.

Step 2

Sprinkle the meat with flour, salt, and pepper. Place a large deep non-stick skillet over high heat. Pour in enough oil to cover the bottom of the skillet and wait for the oil to heat up. Sear the meat in three batches, ensuring it is well browned on all sides. Add more oil if necessary. Remove the last batch of meat from the skillet and add the onion, carrot, and garlic, lightly sautéing.

Step 3

Return the meat to the skillet with the vegetables, pour in the broth, and mix well. Bring to a boil. Add salt, pepper, and half of the thyme, mixing again. Remove from heat, divide the beef and vegetables into six equal portions, and place them in 6 heatproof dishes (each about 600 ml).

Step 4

Peel the potatoes and slice them into 3 mm thick rounds. Layer the rounds over the beef and vegetables, overlapping them. Brush the potatoes with clarified butter, sprinkle with salt, pepper, and the remaining thyme leaves.

Step 5

Cover the dishes with lids or foil and bake for 1 hour. Then remove the lids or foil and cook for another 45 minutes, until the meat is tender when pierced. Serve hot.
