Braised beef brisket in wine
Ingredients
- Beef chuck roast 2½ kg
- Flower Salt to taste
- Onion 3 heads
- Bay leaf 1 piece
- Garlic 6 cloves
- Bacon 10 oz
- Red Grape Juice 25 fl oz
- Green peppercorns 15 pieces
- White Cabbage 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Clean the pork belly from the membranes and cut it in half. Rub it with salt mixed with herbs and sear on all sides in a dry skillet. Thinly slice two heads of onion and place them at the bottom of the slow cooker, then add the meat and all the other ingredients. Pour in the wine and cook for 9 hours.
Step 2
Meanwhile, sauté the chopped bacon in a pan for 8–9 minutes, then add the minced garlic and the remaining finely chopped onion. Cook, stirring, for 5–7 minutes. Add the shredded cabbage and sauté for 6 minutes, stirring occasionally. Then reduce the heat to low and simmer for 45 minutes until tender. Season with salt and pepper.
Step 3
Slice the meat thinly and serve it with stewed cabbage or cabbage salad, as well as mashed potatoes, and even better — with celery root purée.
